For #2, as I mentioned, by default Export to Microsoft Excel will make a one column (ID) file open up (iOS Excel viewer). Tap on the share sheet and choose Copy to Excel (install the Microsoft Excel app). The same file will now open up in Microsoft Excel with all columns available.
